Toutes fra\u00eeches et bien vivantes &#8230;&#8230; L&rsquo;id\u00e9al pour cette recette &#8230;&#8230;..<\/p>\n<p>Il faut pr\u00e9parer un court-bouillon :<\/p>\n<p>Pr\u00e9voir une grande quantit\u00e9 d&rsquo;eau froide.<\/p>\n<p>Ajouter la carotte enti\u00e8re, l&rsquo;oignon piqu\u00e9 de 2 clous de girofle, quelques grains de poivre noir, 2 feuilles de laurier, un peu de thym frais et 1 verre de vin blanc sec.<\/p>\n<p>Amener \u00e0 \u00e9bullition, r\u00e9duire le feu et laisser cuire le court-bouillon 20 minutes.<\/p>\n<p>Reprendre l&rsquo;\u00e9bullition, ajouter une belle poign\u00e9e de gros sel de Gu\u00e9rande.<\/p>\n<p>Mettre d\u00e9licatement les \u00e9crevisses ( attention elles pincent ) et m\u00e9langer.<\/p>\n<p>R\u00e9duire le feu et laisser 10 minutes \u00e0 fr\u00e9missement.<\/p>\n<p>Les \u00e9goutter.<\/p>\n<p>Les laisser refroidir.<\/p>\n<p>Les d\u00e9guster le jour m\u00eame, avec une petite mayonnaise maison &#8230;&#8230; Un vrai d\u00e9lice &#8230;&#8230;..<\/p>\n<p>Et ne pas oublier, le petit vin blanc &#8230;..
